2¾ kilos (1 kg) uncooked rooster wings
½ cup (64 g) arrowroot powder
1 teaspoon salt
½ teaspoon garlic powder
½ teaspoon cayenne pepper (optionally available)
½ cup (112 g) grass-fed butter
½ cup gluten-free sizzling sauce
1. Set the wings on a number of paper towels and pat dry. In a resealable plastic freezer bag, mix the arrowroot, salt, garlic powder, and cayenne (if utilizing). Add the wings to the bag, and shake till properly coated. Set the wings on a wire rack on a baking sheet, and place within the fridge for 1 hour to assist the wings soak up the spices and stop sogginess.
2. Preheat the oven to 400°F (200°C, or fuel mark 6). After the hour of refrigeration, bake the wings for 20 minutes. Flip the wings over and bake for an additional 20 minutes. Whereas the wings bake, in a small saucepan, soften the butter and stir within the sizzling sauce till properly mixed. Put aside.
