4 ounces blue cheese, crumbled (1 cup)
1⁄ 2 cup bitter cream
1⁄4 cup mayonnaise
⁄4 cup milk
⁄4 cup chopped contemporary parsley
1 tablespoon contemporary lemon juice
1⁄ 2 teaspoon salt
3 kilos hen wings (18 wings), ideas discarded, if desired
3 tablespoons butter or margarine
1⁄4 cup scorching pepper sauce
1 medium bunch celery, lower into sticks
Instructions:
1. Preheat broiler. In medium bowl, mix blue
cheese, bitter cream, mayonnaise, milk, parsley, lemon
juice, and 1⁄ 4 teaspoon salt. Cowl and refrigerate.
2. Organize hen wings on rack in broiling pan;
sprinkle with remaining 1⁄ 4 teaspoon salt. Broil 5 inches
from warmth supply 10 minutes. Flip wings and broil
till golden, 10 to fifteen minutes longer.
3. In the meantime, in small saucepan, soften butter with
scorching pepper sauce over low warmth, stirring often;
maintain scorching.
4. In giant bowl, toss wings with seasoned butter to
coat all sides. Organize hen wings and celery on
platter together with blue-cheese sauce and serve. Makes
18 appetizers.
