Mug cakes are a ketogenic delicacy. They can be easily customized, are high in fat, and when corrected can be completely sugar-free and keto-friendly. There’s nothing better than a keto mug after dinner!
What is a mug cake?
Mug cakes have become a trend on the internet over the past few years. It basically describes any kind of cake that can be made quickly in the microwave (usually in a few minutes or less). The term “mug” in mug cake refers to the coffee cup in which these delicious cupcakes are usually cooked.
Being a fan of quick and easy recipes, we decided to create a bunch of different flavor options to try on our keto mug cake.
This keto mug cake recipe includes a base and 5 different flavor options. The base can be made using almond flour or coconut flour. You can get creative with the flavors for your cup cake, but we gave you 5 different options in this recipe:
- Keto peanut butter cake Add 1-2 tablespoons of peanut butter.
- Blueberry cake Add 1/4 cup of fresh blueberries.
- Keto chocolate mug cake – Add 1 tablespoon of cocoa powder and a touch of extra sweetening.
- Pumpkin mug cake Add 1 tablespoon of pumpkin puree and 1/4 teaspoon of pumpkin pie spice.
- Vanilla keto cake – Don’t add anything! The basic recipe is already vanilla flavored. You can add a little vanilla extract for a stronger vanilla flavor.

Low carb cake nutrition
The ingredients you use will determine how your cup cake really is. That’s why we use a low-carb base with almond flour, erythritol, and vanilla.
Each serving of brownie base contains 36g of fat, 13g of protein, and 6g of net carbs. These are great macros for anyone who just wants to enjoy their post-dinner meal without messing up the rest of the day.

Keto mag cake shapes
In this recipe, we use a vanilla base that has nut- and nut-free options. We also wanted to offer flavor options other than just vanilla which is why we came up with these delicious flavours.
vanilla
Sometimes the base flavor is the best. To make a vanilla keto cake, just follow the recipe and omit all optional flavorings. Using a vanilla recipe is great with the addition of some walnuts or pecans and a little cinnamon for a fun fall twist.
blueberry
I used to get blueberry muffins from Dunkin’ Donuts all the time. The cupcakes were large, filled with loads of blueberries, had a pound cake-like consistency, and had sugar sprinkled right on top.
To make this blueberry keto cake, you simply need to add some fresh blueberries to the cup cake mixture before microwaving it. Blueberries will come out soft and warm. They add a delicious explosion to every bite.
Pro tip: If you want a stronger blueberry flavor and blue mug cake, you can crush the berries and mix them into the batter before cooking.
Peanut Butter
Do you miss your favorite childhood peanut butter and jelly sandwiches?! Well, we have the perfect solution. Our Keto Peanut Butter Cup Cake uses the addition of peanut butter to flavor the batter before cooking.
To find a keto-friendly peanut butter option, just look for brands that use two ingredients or fewer. They will all use peanuts, and some may even add salt to their peanut butter. You want to avoid cheap brands like JIF and Skippy that have added sugar.
Pro tip: Add peanut butter powder to your cup cake for a stronger peanut butter flavor.
chocolate
This keto chocolate mug cake is probably the most popular flavor choice. We make this recipe after dinner at least once a week.
To make the chocolate keto cake, you need to add cocoa powder for the chocolate flavour. Sometimes I add a square of dark chocolate for a stronger chocolate taste. For a more intense chocolate brownie flavour, try our mug recipe!
Since chocolate can be bitter, you will need to add a little extra sweetener to this version.
squash
If you love fall and pumpkin spice, you’ll love this cup cake. It’s spicy, sweet, and absolutely delicious when paired with a latte.
Plus, contrary to what most people think, pumpkin isn’t all that high carb thanks to the extra fiber. Pumpkin is also low in sugar, but only slightly sweet, so the cake itself needs less sweetening.
Most people are disappointed with the flavor they get when pumpkin is added to a mug cake. Adding pumpkin pie spice to the mix is what gives this flavor option that signature pumpkin pie feel.
The best thing about pumpkin mug cake is the moist texture you get from pumpkin.
Make it with coconut flour instead
Luckily, we tested this cup cake a couple of different ways to find the perfect ratios between coconut flour and almond flour.
We found that you need a little less than half the amount of almond flour to create the right proportions of coconut flour. This means that instead of 1/4 cup of almond flour (4 tablespoons), you will need 1.5 tablespoons of coconut flour.
The cream helps bring in the extra fat and moisture that the coconut flour doesn’t have, so don’t be afraid to add an extra tablespoon if you want the cake extra moist.
Make it dairy-free
Yes you can, but it won’t be as good. You need to find an alternative to butter and heavy cream.
- Use coconut oil instead of butter.
- Use almond milk or water instead of heavy cream
When using almond milk or water in place of heavy cream, use about half the amount.
Steps to prepare the best cake
We’ve made several cupcakes on our keto days and rounded up our best tips and tricks for the perfect cupcake every time. We made this base nearly 10 times to make sure it’s perfect. With a gluten-free, keto-free, and sugar-free recipe, it doesn’t get much better than this! Here’s how to become a cupcake master:
Melt the butter
The first step is to melt the butter. Melting the butter thoroughly by placing it in the microwave for 15-20 seconds will make it easier to mix the remaining ingredients.
You don’t want the butter to be hot or burnt. Just melt it until it’s completely liquid and stop!
Add dry ingredients
It is important to do this step afterwards to avoid cooking the eggs with hot butter! Add all dry ingredients directly to the melted butter and mix slightly. This creates a barrier between the hot butter and the eggs you are about to add.
Don’t forget the baking powder! It is absolutely essential that your low carb keto cup cake is soft and fluffy.
Add the eggs and mix
Now we can add our egg. I like to use a fork to mix everything together because it means there is one less dirty dish to wash. At this point, you should have a relatively homogeneous mixture. If you have a few lumps, that’s not a big deal, and a microwave will take care of that.
Add your favorite flavors
This need not necessarily be the last step. If your flavors are powders, it’s best to add them with the dry ingredients. If you want to add any finishing touches like blueberries, raspberries, nuts or sugar free
Microwave for 45 to 75 seconds
This is the most important step in achieving the perfect cup cake. The amount of time you put in the microwave is crucial to the moisture and tenderness of your cake.
Every microwave is different, so it’s hard to say exactly how long a microwave will last. The indicator I use is when your cupcake starts to rise above the rim of your coffee cup. Removing it at this time will result in a soft and slightly undercooked center (like a lava cake).
Making cake in the oven
Mug cakes can be baked, but do so in an oven-safe dish or ramekin dish. The texture may also be a little different from normal mug cake. To cook, place in a 350° oven for 15-20 minutes. Check with a toothpick to make sure it’s all done.

Low-carb cupcake placement is individual based on your preferences, but that doesn’t mean we don’t have our favorite suggestions!
Our favorite cup toppings are:
- whipped creamWhipped cream is the best when it comes to any kind of cake. Yes, a scoop of keto ice cream is absolutely delicious, but once you start you may not be able to stop! Instead, make your own homemade keto whipped cream!
- Sugar free
chocolate chips Sugar-free chocolate chips are another delicious addition. They work with all of these cupcakes, and some brands now carry keto white chocolate varieties. This goes great with a keto mug chocolate cake as well as peanut butter. - berries– Strawberries, raspberries, and blueberries make great additions to mug cakes because they are sweet yet refreshing to balance out an already sweetened mug cake.
- Nut butter– This can be any of your favorites, we love having pork on peanut butter and almond butter, but sunflower seed butter is another great nut-free alternative.
