8 (7- to 8-inch) flour tortillas
1 jar (7 ounces) roasted pink peppers, drained and
2 small inexperienced onions, thinly sliced
1 ounce Pepper Jack cheese, shredded (1⁄4 cup)
3⁄4 cup loosely packed contemporary cilantro leaves
1. Preheat oven to 400°F. Place 4 tortillas on massive cookie sheet. Sprinkle one-fourth of roasted peppers,
inexperienced onions, cheese, and cilantro on every tortilla; high with remaining tortillas to make 4 quesadillas.
2. Bake quesadillas till heated via, about 5 minutes. Minimize every quesadilla into 8 wedges. Serve
heat. Makes 32 appetizers.
